Orange Sesame Thai Noodles With Vegetables

Ingredients
- 8oz package of Pad Thai Rice Noodles
- 1 teaspoon sesame oil
- Chopped tamari almonds or black sesame seeds or both
- 1 lime cut in half and one slice for garnish
- ½ bunch baby broccoli
- 1 carrot cut into thin slices
- I bunch green onions chopped- leave a tablespoon for garnish
- 2 bok choy chopped
- ½ red bell pepper sliced
- 8 shiitake mushrooms quartered
- ½ bunch cilantro chopped - leave a tablespoon for garnish
Orange Sesame Sauce
- Juice from 1 large orange
- 5 cloves garlic
- 1½ inches sliced ginger
- 6 oz raw tahini
- Dash rice vinegar to taste
- ¼ cup tamari
- 3 large tablespoons raw honey to taste
- 1 green onion chopped
- A few sprigs of cilantro chopped
Directions
Orange Sesame Sauce
- Place all ingredients in a Blendtec or Vitamix until smooth. Adjust for sweetness and saltiness and the possible addition of rice vinegar to balance flavors.
Final Dish
- Cook noodles, drain, and toss with a teaspoon or less of toasted sesame oil. Water sauté or blanch all veggies except green onion and cilantro.
- Toss veggies with noodles including green onion and cilantro.
- Add sauce and gently toss until everything is coated with sauce. Serve in bowls and garnish with chopped green onion, cilantro and chopped tamari almonds or black sesame seeds, or both.
- Top with a slice of lime twisted and squeeze some fresh lime on top to taste.
- There will be extra sauce leftover. This can be used as a dip for cut-up veggies or add rice vinegar and if needed a bit of toasted sesame oil and use as a salad dressing.
