NOTES
Creating the Mint Simple Syrup: In a small saucepan, combine water, sugar, and mint leaves. Bring the mixture to a boil, stirring until the sugar dissolves. Let it simmer for 1 minute, then remove from heat and allow the syrup to steep for approximately 30 minutes. Strain the syrup through a mesh strainer to remove the mint leaves and let it cool before using.
Choosing ripe nectarines: Select ripe but firm nectarines for grilling. This ensures that the fruit holds its shape and develops a nice caramelized exterior while remaining juicy and flavorful.
Preparing the nectarines: Pit and cut the nectarines in half, leaving the skins intact. The halves should be evenly sized for consistent cooking.
Brushing with syrup: Brush the cut side of the nectarines with the prepared mint simple syrup. This adds a touch of sweetness and imparts a subtle mint flavor.
Grilling time and technique: Place the nectarines on the grill, cut side down, and cook for 10-15 minutes or until they are tender and have grill marks. Keep a close eye on them to avoid overcooking, as the exact grilling time may vary depending on the heat of your grill.
Feel free to adjust the grilling time based on your desired level of doneness and caramelization. The goal is to achieve a slightly softened texture while maintaining the natural juiciness of the nectarines.
